Mak Kwai-pui, former chef of a three Michelin-starred restaurant in Hong Kong, decided to open up with his partner chef Leung Fai Keung a 20-seat dim sum restaurant in Mongkok, a very busy neighborhood in Hong Kong – this restaurant was Tim Ho Wan.
How did two chefs, Jeremiah Stone and Fabian Von Hauske – allegedly lovers of Cheez-its and McDonald’s French fries – come up with such a refined and ingenious menu at Contra? I don’t have the answer really, but one thing is for sure, they deserve their Michelin star without a doubt!
Tarantula juice, monkey rum, panther sweat…These code words for alcohol beverages were used during the prohibition in the speakeasies to fool the law officials and government!
