Here is the blog you’ve all been waiting for! Or at least the one I’ve been talking about for the past ever. This blog is linked to my Instagram page, World_food_dina, where I post about the restaurants and food stores I think deserve our attention.
As you may or may not know, I’m quite picky about food in general, the quality of ingredients, as well as the quality of service; and I take all of these aspects into account when posting.
I decided, after some very deep thought, to start my very first blog by giving you all (at last!) the recipe of my very famous hummus. And I’m not bragging!! My hummus has made the round the world voyage and has never…ever disappointed! Ask my friends if you don’t believe me!
I never shared my recipe before, not because I didn’t want to, but because I never had the energy to write it down. So this time I measured each ingredient to make sure I’m not misleading you.
Let’s start with the ingredients:
– 1 small clove of Garlic
– 14 ounce (400 gr) Chickpeas in cans
– 1 tbsp Vegetable oil
– 1 Lemon
– 1/2 cup (100 ml) Tahini
– 1 tsp Salt
– 1/2 tsp Cumin or a little bit more depends on your taste
– 2 tbsp Yogurt
For the topping:
– Cumin
– Chili powder
– Olive oil
You absolutely need a food processor or a blender to be able to realize this recipe.
1- Peel the garlic clove and cut it lengthwise in two to remove the stem. Cut it into big pieces and throw them in the food processor. Blend until they are reduced to little pieces. Add the chickpeas and the vegetable oil and blend until you have obtained a paste. You should not feel or see any chickpea lumps.
2- Pour the lemon juice and continue to blend. While mixing, add the salt and the cumin into the paste.
3- Pour the tahini on top and mix again until you have a very nice, homogeneous mixture.
You can prepare this mixture in advance and leave it in the fridge.
4- When you are ready to serve put the paste in a big bowl and add the yogurt. Stir very firmly with a spoon until the yogurt is completely incorporated into the paste.
In a bowl, or a special Hummus dish (see picture below), use a tablespoon to put 3 lumps of paste in the middle. With the back of the spoon spread the paste against the side of the bowl, leaving enough hummus in the middle to make a fountain.
5- Sprinkle the cumin and the chili powder on the hummus as shown in the picture below.
You can make 2 crosses or any design you want.
6- Pour the olive oil in the channel and voila!! Your Hummus is ready and delicious!
Notes:
If you prefer using dry chickpeas, let them soak overnight in water and then boil them for at least 2 hours. You need to be able to melt the chickpeas between your thumb and your index without any pressure.
Taste and adjust the seasoning if necessary. You might need to add a little lemon juice, as sometimes the lemons are not so juicy, or yogurt if your paste is a bit thick.
