This is an all-shades-of-orange soup, full of vitamins and fiber. It’s also a great source of antioxidants and minerals that reduce the risk of cardiovascular diseases.

The butternut squash brings a nutty flavor to the soup, the carrot and the sweet potato add some sweetness, and the chestnut makes it a warm Christmassy dish.

1 onion
1 garlic clove
2 leeks
1 butternut squash
1 big carrot or 2 small carrots
2 medium-sized sweet potatoes
1 cup / 150 gr cooked chestnut – easy to find between November and December.
2 L / 8 cups water
3 bouillon cubes – It can be a mix of vegetables and chicken or just vegetables to make it vegetarian.

1- Pour the olive oil into the pan.
2- Peel and cut the onion into 8 pieces. Peel the garlic clove and cut it lengthwise to remove the stem. Cut it into pieces and throw them with the onions in the pan. Stir a little bit on medium-high heat. Don’t brown the onions.
3- Cut the dark green parts of the leeks and discard them. Cut the white part into large slices (1.5 cm or ½ inch) and add them to the pan and stir.
4- Peel the carrots and the sweet potatoes and cut them into large pieces. Throw them in the pan and stir.
5- Cut the butternut squash in two to make it easier to peel. Cut the bulb part in two to remove the seeds. Cut the butternut squash into small cubes of 2.5 cm or 1 inch. Add them to the vegetables in the pan and stir for a minute.
6- Cut the chestnuts into big chunks and add them to the pan.
7- Add the water and the bouillon cubes. Cover with the lid and leave it until the pressure cooker whistles. If you are using a normal pan, it might take 45 min for the vegetables to cook. If the water is evaporating, add water during the cooking process.
8- Remove the pan from the heat and leave it to cool down. Remove the lid and use a hand blender to mix the soup. You can also use a food processor or a blender.
9- Cut the chestnuts left for decoration into small pieces and heat them in a skillet.
Pour the soup into each bowl and place a spoon of chestnuts in the middle. Sprinkle with chopped cilantro and cayenne pepper to enhance the taste and the color.
This is the perfect season to prepare this soup. Christmas 2020 might not look like any other Christmas, but we can always please ourselves with a delicious meal.
