Lebanese cheesecake or the unpronounceable Knafeh be jibneh! This is a homemade version of it – maybe, and just maybe, a little bit lighter than the original.
Potimarron, or Red kuri squash, is a hard-shelled winter squash variety with firm orange flesh. It belongs to the Cucurbita maxim group. The flesh provides a very delicate and mellow chestnut-like flavor (marron means chestnut in French).
