There are many recipes for Tiramisu but I have to tell you that this one is simply the best. I made it again yesterday for my guests and they were licking the dish. I promise you, you’re going to impress your friends and family.

Tiramisu is quite easy to make but I very often find the result disappointing: too heavy, too compact, or too sweet. I tried several ones and came up with this one.

Prep Time: 30 minutes
Rest Time: 3-4 hours in the fridge
Ingredients:
500 gr (2 cups) Mascarpone
Coffee (strong or Espresso) Equivalent of 2 mugs
4 eggs
100 gr (1/2 cup) Sugar
1 tbsp Grand Marnier
20 Lady fingers
2 tbsp Cocoa powder

Separate the egg whites and yolks. In a bowl, beat the yolks with the sugar.

When the color is off-white and the texture is creamy add the liquor and the mascarpone. Whisk until you have a smooth cream.

Beat the egg whites separately. It’s ready when you turn the bowl upside down and the foam sticks to the bowl. Be careful when you do that though, you might end up with your egg white on your floor!

Add them gently to the cream with a spatula. Don’t whisk or stir, it will remove the foaming of the egg white. Turn the spatula upside down to incorporate the egg into the cream.

Prepare a very strong coffee that can wake a ghost. Dip the ladyfingers in the coffee and lay them down in the dish to make one layer. Pour half of the cream on it, lay down another layer of ladyfingers dipped in the coffee, and then pour the rest of the cream. Shake gently the dish to flatten the top.

Let it rest for at least 3-4 hours in the fridge. With a sieve, sprinkle the cocoa powder on top of the cream before serving.
