We are in our fifth week of confinement in NY, and you might just have a few vegetables lost in your fridge that you don’t know what to do with. This Korean pancake is a remedy for your problem.

I found this recipe on YouTube searching for some exotic dishes to make for my family. I found this online cooking show called Maangchi – hammer in English – presented by a lovely Korean American woman: Emily Kim.
This delicious, crunchy vegetable pancake can be served as a vegetarian or vegan meal or as an appetizer. You can use any vegetables you like or have in your fridge, such as leeks, green onions, onions, zucchini, potatoes, sweet potatoes, carrots, Jalapeno, mushrooms, parsnips, bell peppers, etc.
The most important thing is to have the vegetables thinly sliced or cut into matchsticks.
I made this pancake with the ingredients I had at home:
2 ½ cups / 350 g of vegetables:
– 2 inches / 5 cm long leek
– 4 green onions
– half of a medium-sized onion
– half of a zucchini
– half of a sweet potato
– half of a Jalapeno
¾ cup / 140 g flour
¾ cup / 20 cl water
½ tsp salt
3 tbsp vegetable oil
Dipping sauce:
2 tbsp soy sauce
2 tsp vinegar
½ tsp chili powder – optional
½ tsp Sesame seed – if you have it in your cupboard
1- Cut the leek in half lengthwise and then thinly slice it.

2- Cut the green onions into inch-long pieces.

3- Peel the sweet potato and cut it into matchsticks.

4- Cut the onion and the Jalapeno into fine slices.

5- Cut the zucchini in slices and then cut into matchsticks.

6- Mix all the vegetables in a big bowl
7- Add the flour, salt, and water and mix it all together.

8- Heat a non-stick skillet – 12 inches – on medium-high heat. Add 2 tbsp of oil to the hot skillet and add the vegetables. Spread evenly to make a thin pancake and flatten with the back of the spoon or spatula. Lower the heat a little bit.

9- Cook for 10 minutes. Shake the skillet a bit to move the pancake on the sides. Flip the pancake (if you have the skill!) or use some ingenious tricks such as a spatula or a dish to turn the pancake upside down.
10- Add the remaining oil all around the pancake and leave it on the heat for 10 minutes. Lift the pancake a little bit to let the oil spread beneath the pancake.
11- Prepare the dipping sauce: just mix all the ingredients.
The pancake is ready when both sides are crispy and the vegetables are cooked.
