We are in our fourth week of confinement: spring has sprung, the sun is shining, and COVID-19 is still ravaging the planet. So let’s stay home, relax, and cook!
I discovered rosemary in earnest through this dish years ago. I wasn’t familiar at all with this herb, even though it’s native to the Mediterranean. I love how it flavors the dishes and brings an elegant taste to the meat.

Ingredients for the rosemary chicken
10 pieces of organic chicken – depends on your preferences: thighs, drumsticks, or breast
2 medium-size onions
1 garlic clove
4 fresh rosemary springs
2 bay leaves
1 cup / 25 cl white wine
1 cup / 25 cl chicken broth
Salt and pepper
Ingredients for the escaroles:
2 Escaroles
2 garlic cloves
2 tbsp Olive oil
Salt
1- Salt and pepper the chicken.
2- Brown in a frying pan the chicken for a few minutes on each side starting with the skin side. Once the chicken has a golden color, remove it and throw away the extra grease. Don’t pour the grease in the sink, it clogs the pipes. Pour it instead in a jar and when this is full, throw it out.
2- Chop the onions and the garlic in big chunks, brown them in the frying pan you used for the chicken. Deglaze with the white wine before they turn brown and bring to a boil.
3- Place back the chicken, add the bay leaves, the rosemary, and the chicken broth.
4- Reduce the heat and cover until the chicken starts to fall apart. Use a fork to check.
5- Remove the lid when the chicken is ready and increase the heat to reduce the juice in half. Salt and pepper if necessary.
Meanwhile, prepare the escaroles. If you can’t find escaroles you can substitute them with spinach, frisée lettuce, mustard green, or Swiss chard.
1- Wash and cut the escaroles lengthwise in two.
2- Pour 2 tablespoons of olive oil into a non-stick frying pan. Add the garlic chopped in big chunks.
3- Add the escaroles when the oil is warm and turn them so each side is coated with oil. Cover and reduce the heat until the escaroles reduce.
Serve the chicken with a few branches of escarole and boiled or browned baby potatoes. This dish can be prepared in advance and reheated. It’s even tastier as the chicken gets soaked in the sauce.
